I like my scallops neat. Simply pan seared and no seasonings except for a little salt. You can have your sauces, I don't want 'em and don't even think of dipping them in batter and deep frying them. It won't work. Scallops are delicate and don't stand up well to over cooking and please do NOT over cook them. The texture almost provokes a frenzy and the flavour is sublime. Sea scallops are my weakness. There's something almost, dare I say, carnal about having a perfectly seared scallop fill your mouth with texture and flavour in that way they do.
